Grand Champions!!! Live Oak, FL!!!

BBQ Friends and fans, this was one for the books!!! Team Unknown BBQ was awarded Grand Champion out of 41 of the most grizzled and well seasoned BBQ teams in the North American south.The following is a play by play account of how the events unfolded.(Sat.)= First up to bat was Papa Clarks chicken turn in. Chicken has always been the teams achilles heel but it was not to be in Live Oak. Papa Clark with his over 50 years of BBQ expierience(Yep,you read it right. Papa Clarks been cookin’ Q since he was 5 years old!) gut hooked the judges with supeirior appearance,taste,and tenderness to take the 1st place check. Next up to bat was the Rib turn in. To say that the Gen. Outlaw Leroy Pointer and head cook JW make the best Ribs in the upper hemisphere is a tragic understatement. The proof was in the puddin’ as they say and Team Unknown secured yet another 1st place check. Third in the lineup was JW and Leroys chart toppin’ pork butts. Although the teams Pork did not take top prize, it took home a (respectable,admirable,noteworthy,ect…) 5th place in spite of JW and Leroys apparent lack of attention to detail. Both JW and Leroy were brought up on formal charges due to this embarrasment. The clean up hitter and 4th at the plate was King Dorseys brisket fresh off the plane from France. Superior genetics and a steady diet of Merlot and Snails gives this exotic brisket a winning taste,texture,and mouthfeel. The judges agreed and Team Unknown was awarded yet another first place check! Winning three out of four catagories and taking home the Grand Championship,an invitation to the American Royal BBQ comp. in Kansas City, and a possible draw for the superbowl of BBQ’s the Jack Daniels invitational in Lynchburg Tenn. is something well never forget!!! Thank yous go out to everyone who congratulated us on our win, Rob Bagby(BBQ Wizard)from Swamp Boys BBQ school, Dana and Janet Hillis, Damon Wooley for putting on a killer contest, and everyone in the suwanne river campground for puttin’ up with Dorseys history of classic country music. Raise Hell!!!!

Team Unknown loves BBQ, and competition BBQ loves Team Unknown. The team walked away with an unheard of 6th place overall out of a field of teams that would make any pitmaster worth thier salt shake in thier boots. This event not only brought out the heavy hitters from the FBA but also some of the most seasoned and formidable pitmasters from the KCBS circuit as well. The Slabs, Pellet Envy, Quau, Jacks old South and Smoking Guns were a few of the KCBS teams vying for the 30,000.00 purse. Anyone who knows anything about Professional BBQ knows these teams have won more money than the law allows and then some. After the dust settled FBA teams took 1st place and a check for 1,000.00 dollars in 3 out of 4 catagories. Whiskey Bent continues their domination in the chicken catagory, Larry Baker with Mount Dora BBQ picks it up and lays it down with a first in brisket, and EB’s Pit Stop seals the deal with a first in pork. Friday night at BBQ comps. is for hanging out with new/old friends, tellin’ lies and drinking some adult beverages. Standouts from Fri. evenings festivities were as follows, #1= Kyle Laval from The Slabs stopping by the Unknown camp and laying down some serious Kansas City blues on the gittar. To say that Kyle can play the gittar is the understatement of the century.Damn. #2= All the FBA teams gettin’ together for some pre awards smack talk and fellowship.#3= Last but not least, the boys from Smoking Guns BBQ crew. Southern hospitality at its finest!!. Next stop, Live Oak, FL. Raise Hell!!

BBQ Supremacy

Thats right folks, Team Unknown has been girding thier loins and burning the midnight oil at the Team Unknown command center in anticipation of another winning strech of BBQ comps. The command center deep in the heart of Polk Co. FL. has been buzzing with activity. Be it new top secret rubs, or new flavor profiles, the team has dotted every (i) and crossed every (t) in its quest for BBQ supremacy. Spices from the farthest reaches of the globe have been utilized for flavor profiles that could very well turn the competition BBQ world on its head. The team would never abandon its traditional southern approach to all four meat catagories but we feel a slight tweak should be in order to send the judges home with a taste expeirience that theyll not soon forget. We have secured the exotic spice “saffron” by the trunkload, Japanese matsuke mushrooms by boatload,white alba truffles by the bucketfull, and last but not least, an entire Kobe beef carcass shipped direct from Japan. Our next competition is July 3rd. at the Florida State Championships. Ahhh! Palm Beach Gardens.

Team Unknown was promised hot weather plus faulty electrical power, and Palm Beach Gardens did not dissapoint!!! Damien drank his weight in Mountain Dew and no one is talking to team member ” ” anymore. If only we could get him to quit talking to us. The cook and turn in boxes went off without a hitch and the team was besieged with BBQ crazed females who look like they wandered in from the local country club. Resident brisket king Mr. dorsey ignored all quiet time rules and punished everyone on property with a midnight serenade consisting of old country standards w/ an out of tune pawn shop guitar. The team pulled it together through the sweltering heat and finished a respectable 8th out of 38 teams. Laying waste to 31 professional bbq teams is no easy feat but Team Unknown is hungry for the Grand, and theyre ready to eat! Raise Hell!

With a one week break from our last comp., and threats of termination from our day jobs, the team is back to try its luck in Haines City! Almost repeating our sucess in Winter Haven the team pulled off some impressive scores. 7th place pork,2nd place brisket,5th place chicken, and 4th place ribs for a 3rd place overall out of 37 pro teams. The atmosphere in camp was meyhem for the entire event. Team member Haines City George was in attendance bringin the entire population of polk county with him. One day he will be Mayor, nuff said. Congrats to Whiskey Bent on walkin in pork and chicken, and to Dana with Big Papas Country Kitchen for walkin and a 1st place in pork. Raise Hell, Dorsey

Smoke on the Water

Here we are again the weekend after pig fest. The team was ready to split wigs in its home town with some chart toppin que! The game plan stayed the same but this time lady luck was on our side. 2nd place pork, 2nd place brisket, and 7th place ribs! took us all the way to Reserve Grand Champion and a paycheck to help with some bills. To say that Frank Csmos puts on an awesome event is an understatement. The entertainment he finds gets better every year. Congrats to all who walked, but especially to our boys Whiskey Bent with a 196.00 in Brisket. Thats just 4 points from a perfect score folks! Dammit man. Yours in sport,Dorsey.
